Chilli Snapper

This can be pulled off for those fanciest of dinner parties or a weekend of camping.

Ingredients

4 snapper fish fillets. (about 240g are a good size)

4 tbsp  Darlington Farms Signature Hot Sauce

2 cloves of garlic chopped fine

1 lemon cut in ¼

Recommend cooking utensils

1 non stick pan or bbq with grill plate.
1 stainless steel mixing bowl large enough to cover 1 fish fillet minimum.

Methods

1.
Marinate each fillet with 1 tbsp of hot sauce and half a clove of garlic. For best results place in the fridge for about 3hrs and remove from fridge 10mins before cooking.

Get your pan hot and have a cup of room temperature water ready.
3.
Place fish in pan and poor about 15mil of water and then place bowl over fish and cook for 6mins. Remove bowl and flip fish and cook for a further 6mins until lightly golden. Repeat if necessary for the other fillets.
4.
Plate up with some extra hot sauce on the side and lemon.
